Zucchini casserole

4 cups chopped-up chicken or turkey 6 cups diced unpeeled zucchini

 4 cups chopped-up chicken or turkey

 6 cups diced unpeeled zucchini

 1 cup diced onion

 1 cup diced carrots

 1 can cream of chicken soup (undiluted)

 1 (8 ounce) container of sour cream

 1 package of chicken flavor stuffing

 1/8 teaspoon garlic powder

 3 tablespoons butter

 1 cup shredded cheddar cheese

Here are the directions. Sorry for the inconvenience:
Combine zucchini, onions and carrots and boil for 5 minutes. Drain and cool. Next, combine soup, sour cream and garlic powder in a large bowl. Add chicken and zucchini mixture and put into a 9-inch by 13-inch pan. Follow directions on back of stuffing box and use amount of butter mentioned above. Layer stuffing on top of zucchini and cover with aluminum foil. Bake at 350 degrees for 50 minutes. Uncover and top with shredded cheese and bake until cheese is melted (10 minutes longer). Serves six to eight servings.
