Combine the following ingredients until crumbly, using a pastry blender:
6 cups flour
2 1/4 cups sugar
1 1/2 teaspoon soda
3/4 teaspoon salt
2 1/4 cups butter
Stir the following ingredients in a small bowl:
1 1/2 teaspoon vanilla
3/4 cup buttermilk
Combine liquid ingredients into bowl of dry ingredients and mix. Dough will be sticky.
Scrape dough onto plastic wrap and refrigerate for several hours or overnight.
Using a rolling pin, roll out 1/3 of the dough at a time to desired thickness and cut with your favorite holiday cookie cutters.
Bake at 350 degrees for six to eight minutes.
Let cool, then frost and decorate.
