Sweet Potato Casserole

2 40 oz. cans sweet potatoes, canned 1 cup white sugar

2 40 oz. cans sweet potatoes, canned

1 cup white sugar

3 eggs

1/2 cup margarine, softened

3/4 cup evaporated milk

1/2 tsp nutmeg

1/2 tsp cinnamon

Drain potatoes and then mash. Add other ingredients and mix well. Place in a greased 9-inch by 13-inch baking dish. Bake 20 minutes at 375 degrees.

Topping:

1 cup Corn Flake crumbs

3/4 cup brown sugar

3/4 cup margarine, softened

3/4 cup pecans, chopped

Mix all topping ingredients together. Sprinkle over hot potatoes. Bake 10 minutes at 375 degrees.

Variation: add marshmallows on top during the last three minutes of cooking.
