(serves 4 to 6)
1 cup rolled oats (quick cooking or regular)
1/2 cup sifted, all-purpose flour
1/2 cup brown sugar, firmly packed
1/4 tsp. salt
1 tsp. cinnamon
1/2 cup (1 stick) butter or margarine
4 cup peeled, sliced, tart apples
Peel, core and slice apples. Measure and set aside in bowl. Preheat over to 350 degrees.
Sift flour and measure. Place rolled oats, flour, sugar, salt and cinnamon in a bowl and mix to blend.
Add soft butter or margarine and blend well with pastry blender, fork or two knives held close together.
Grease a baking dish. Arrange peeled, sliced apples in baking dish. Spread oatmeal mixture on top of apples and press down lightly.
Bake about 30 minutes or until toping is brown and apples are tender when tested with a fork.
Serve warm or cold with milk, cream or ice cream.
Variations In place of fresh apples, use 4 cups sliced fresh apricots; peeled sliced, fresh peaches; cut rhubarb; or 3 cups canned apple slices, drained.
