Hobo Stew

25 pounds beef chuck roast

30 pounds potatoes

15 pounds baby carrots

10 pounds onions

6 stalks celery

3 jars beef bouillon

3 gallons green beans

3 gallons sweet peas

3 gallons corn

10 gallons vegetables for stew

10 pounds fettuccini noodles

15 gallons water

Cut beef into one-inch chunks. Cut potatoes, onions and celery into bite-size pieces.

Brown beef in kettle for about 30 minutes. Add water and bouillon. Add carrots, onions and celery.

Cook until carrots, onions and celery start to get soft. Add all can vegetables and mix. Add potatoes and noodles.

Simmer until potatoes and noodles are done (about 2 1/2 hours). When stirring, stir off the bottom.

Makes 400 to 500 servings (or about 50 gallons).
